Louis Pasteur Was Right!

As I type I can hear a light rhytmic drumming sound of the respiration of tiny yeast cells as they devour sugars in a fermenter that sits in my closet just a few feet away. Besides the carbon dioxide, this process also creates a wonderful substance called alcohol. Alcohol is great for many reasons, not the least of which is that it makes me more attractive to the opposite sex.

I assure you that fermentation still works. This is a very calming fact to me. Creating beer can be a very spritual experience, you're actually encouraging yeast cells to eat, to multiply, to go through their entire life cycle. It's a process that is fascinating to watch and wonderful to ponder.
